PECAN PIE CUPCAKES IN A JAR
FUDGE CAKE, GOOEY SWEET PECAN AND BITTERSWEET CHOCOLATE FROSTING MAKE THIS LITTLE GEM A TRUE PLEASURE!!!
On medium speed, beat 1 1/2 cups butter until fluffy - 1-2 minutes. Beat in 1 cup bittersweet chocolate chips(melted and cooled) until blended. On low, beat in 3 cups confectioners' sugar then 2 Tbs milk. On medium-high, beat until fluffy. Transfer to pastry bag fitted with large star tip. Mix 4 cups toasted pecan pieces and 2 cups dark corn syrup. Horizontally cut 24 fudge cake cupcakes (previously baked without liners - use your favorite recipe or box mix) in half. In each of 16 8 ounce canning jars, layer 1 cupcake slice, 2 Tbs pecan mixture and repeat for 2 more layers. Pipe frosting on top cupcake layer, and garnish with pecan pieces and 1 whole pecan half.
Now that's my idea of Heaven in a Jar!!!!
